Vegan Blueberry Grunt

Total Time: less than 45 minutes

Yield: serves 3-6


Berry Mixture Ingredients:

  • 16 oz frozen blueberries (about 4 cups)

  • ⅓ cup sugar

  • 1 orange - juiced


Dumpling Ingredients:

  • ½ cup all-purpose flour

  • 1 tablespoon sugar

  • ½ teaspoon baking powder

  • Dash of salt

  • ½ teaspoon nutmeg

  • 1 ½ tablespoons vegan butter (I used Earth Balance)

  • 1 ½ tablespoons oat milk


Instructions:

  1. Make the berry mixture. In a saucepan, combine blueberries, sugar, and the juice from the orange. Mix and bring to a boil. Reduce heat to a simmer.

  2. Prepare the dumplings. Mix the flour, sugar, baking powder, salt, and nutmeg.

  3. Using your fingers, mix in the vegan butter.

  4. Add the oat milk and mix until it becomes a ball of dough.

  5. Divide the dough into tiny dumpling balls that are about 1 teaspoon - 1 tablespoon in size.

  6. Add dumplings to the simmering berry mix. Carefully cover the dumplings with some berry mix. Careful not to break them.

  7. Let simmer for 10 minutes uncovered.

  8. Gently mix, cover with lid, and let simmer for another 10 minutes.

  9. Remove from heat and serve.

  10. Enjoy!


I just picked up this 90s vegetarian cookbook from one of my local thrift shops and it is PACKED with amazing ideas. I have a feeling it’s going to be my new favorite guide for the fall and winter. I’ve already got 20 pages flagged and that was just from flipping through it for a short second. Anyways, I had never heard of a grunt and the name is obviously eye-catching. The recipe in the book is not vegan and it calls for strawberries or strawberries and rhubarb. I thought I had both of those things and actually had neither so I made it with blueberries and it was delicious. You could use any vegan butter for this recipe and any vegan milk. Earth Balance and oat milk are just my comfort zone. I served my Grunts straight up with some powdered sugar but I think it could use a little coconut cream or vegan yogurt. Still delicious though and it was INCREDIBLY quick and easy to make. Good luck with your grunts! Cheers!
